Halal Caribbean Curry Recipe with Chicken

Ingredients
- 4-5 chicken drumsticks with the skin removed
- 1 large red onion, chopped
- 2 red or yellow peppers
- 2tsp sunflower oil
- 425g can of unsweetened pineapple chunks
- 400g can of coconut milk
- Can of red kidney beans
- 3-4 tbsp curry powder
- Bunch of fresh coriander, chopped
- Handful of sultanas
- Salt to taste
Method
- Heat the oil on a medium-high heat in a large pan or wok.
- Brown the chicken on all sides then remove the chicken and set aside.
- Fry the onions and peppers together in the pan, cooking until softened (about 5 minutes).
- Put the chicken back into the pan with the curry powder, stirring.
- Pour in the coconut milk as well as the pineapple chunks (juice included).
- Stir in the raisins and kidney beans.
- Season to taste with salt then leave to simmer on a low heat for 45 minutes.
Once the sauce has thickened and the chicken is tender, your Caribbean curry chicken is ready to eat. Serve the curry over freshly cooked long-grain rice or other grains, sprinkling the chopped coriander as a garnish. And don’t forget warm naan bread!
