Quick and Easy: Chicken Alfredo with Egg Noodles
Legend has it that the original Alfredo recipe was created in Rome in 1914 by a chef named Alfredo di Lelio. It was one of the most popular dishes at his restaurant Alfredo’s, an establishment frequented by famous silent film stars Douglas Fairbanks and Mary Pickford.
The recipe has changed over the years and is easy to customize to serve your particular tastes. One easy iteration of Alfredo is our delicious Chicken Alfredo with Egg Noodles recipe. To make it an even easier quick mid-week meal, you can buy a jar of ready-made Alfredo sauce and fresh egg noodles.

For the Alfredo Sauce:
Ingredients
- 25g butter
- 2 garlic cloves, minced
- 300ml double cream
- 100g freshly grated parmesan
- 1tsp mixed dried herbs
- ½ small bunch parsley, finely chopped
Method
- Over medium-low heat, melt the butter in a pan.
- Fry the garlic in the butter for 1 minute.
- Add in the cream and herbs and bring the mixture to a simmer.
- Once simmering, stir in parmesan until thoroughly melted and blended.
For the Chicken and Pasta:
Ingredients
- 250g dry wide egg noodles
- 2 chicken breasts, cut into cubes
- 1 tbsp light olive oil
- 1 onion, diced
- 1 green pepper, diced
- 1 cup peas
- 1-2 cloves garlic, minced
- Salt and pepper to taste
- ½ cup parmesan for garnish
- 1 bunch fresh parsley for garnish, chopped
Method
- Bring a pot of salted water to the boil and add in the egg noodles. Cook until al-dente then drain and keep to the side.
- While the noodles are cooking, heat up the oil in a pan and add in the onion and chicken.
- Once the onion is softened and the chicken is cooked through, stir in the Alfredo sauce and peas.
- Season to taste with salt and pepper.
- Serve over the noodles, garnishing with parsley and parmesan cheese.
- Eat and enjoy!
