the best Shepherd’s Pie

In colder winter months, a perfectly cooked shepherd’s pie can bring warmth and joy to your family. Even if you’ve never done it before, this shepherd’s pie recipe breaks it down into simple steps that will leave you will a shepherd’s pie n easy and delicious winter warmer meal.

Ingredients:

  • 500g fresh lamb mince
  • 1 tbsp of vegetable or sunflower oil
  • 1 large onion, diced
  • 900g potatoes, cut into chunks
  • 2 carrots, chopped
  • 2 tbsp tomato purée
  • A few generous drops of soy or Worcestershire sauce
  • 500ml beef stock
  • 85g butter
  • 3 tbsp milk

Method:

  • Heat the oil in a saucepan at medium heat. Add carrots and onions, stirring until softened (about 5 minutes).
  • Once the carrots and onions are softened, turn up the heat and crumble in the lamb mince. Hold back any excess fat.
  • Cook the mince until browned, stirring to ensure even heat distribution.
  • Stir in the tomato puree and soy/Worcestershire cause, frying with the mince for a few minutes.
  • Slowly pour over the beef stock and bring the saucepan to a simmer.
  • Cover the saucepan and cook for 20 minutes, then remove the lid and cook for a further 20 minutes.
  • Boil the potato chunks in salted water for 10 minutes until tender. Drain, then mash the potatoes with the butter and the milk.
  • Preheat your oven to 180C/160C fan/Gas 4.
  • Pour the minced mixture into an ovenproof dish and cover the top with the freshly made mash. Give the mash a bit of a ruffle with a fork for that traditional shepherd’s pie flourish.
  • Put the dish into the oven and bake for about 25 minutes, or until the top starts to turn golden in colour. The mince should be bubbling around the edges as well.
  • Leave to stand for 5 minutes before serving your delicious pie!

Note for freezing: If you don’t plan to eat the pie right away, you can freeze it after putting the mashed potato on top. You can even increase the recipe to make multiple homemade Shepherd’s pie-ready meals. When you cook from frozen, cook at 160C/140C fan/gas 3 for 1 hour until it’s piping hot in the centre.
