Ingredients:

  • 500g Chicken Breast, cut into pieces
  • 2 cups basmati rice, washed and soaked for 30 minutes
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 2 tablespoons yoghurt
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon biryani masala
  • 1 teaspoon turmeric powder
  • Handful of fresh coriander leaves, chopped
  • Handful of fresh mint leaves, chopped
  • Salt to taste
  • Cooking oil or ghee

Instructions:

  • In a large pot, heat oil or ghee over medium heat. Add sliced onions and cook until golden brown. Remove half and set aside for garnish.
  • Add ginger-garlic paste to the remaining onions in the pot and cook until fragrant.
  • Add chicken breast pieces and cook until they change colour.
  • Stir in tomatoes, yoghurt, biryani masala, turmeric powder, salt, coriander leaves, and mint leaves. Cook until the tomatoes are soft.
  • Drain the soaked rice and add it to the pot. Pour in enough water to cover the rice by about an inch.
  • Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes or until the rice and chicken are fully cooked.
  • Garnish with the reserved fried onions and serve hot.

Grilled Lemon Herb Chicken

Ingredients:

  • 500g Chicken Drumsticks (Skin Off)
  • Juice of 2 lemons
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste

Instructions:

  • In a bowl, combine lemon juice, olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
  • Place chicken drumsticks in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.
  • Preheat the grill to medium-high heat.
  • Remove chicken drumsticks from the marinade and discard excess marinade.
  • Grill chicken for 20-25 minutes, turning occasionally, until fully cooked and golden brown.
  • Serve hot with a side of grilled vegetables or salad.

  • 4 lamb chops

Instructions:

  • Preheat your oven to 400°F (200°C).
