BBQ Chicken With Alabama White Sauce

A less well-known BBQ sauce, Alabama White Sauce is easy to make and delicious. In addition to using some as a marinade, once you grill or smoke your chicken you can drizzle over the remainder for an extra boost of its incredible, tangy taste.

Ingredients

For the Chicken: 

  1. whole halal chicken, butterflied
  2. olive oil

For the Rub: 

  • 1 tsp sea salt
  • 1 tsp cracked black pepper
  • 1 tsp onion granules
  • 1 tsp garlic granules

For the Alabama White Sauce: 

  • 200g of mayonnaise
  • 80 ml of cider vinegar
  • 50 ml of apple juice
  • 1 garlic clove, minced
  • 1 tsp cracked black pepper
  • 1 tsp horseradish sauce
  • 1 tbsp of Worcestershire sauce
  • Lemon juice to taste

    Optional: a few dashes of hot sauce
     
    Method
  1. Combine the spice rub ingredients in a bowl. 
  2. Brush some oil on the chicken then sprinkle over the rub. Massage the rub well into the chicken. 
  3. Prepare your BBQ grill to cook over indirect heat at about 130°C. Once it has come up to temperature, throw on a handful of wood chips. 
  4. Make the Alabama White Sauce by mixing all the ingredients together in a bowl. Taste and adjust salt, lemon juice, and hot sauce to taste. Split the sauce into two bowls: one will be used to marinate the chicken and the rest will be used as a topping on the cooked chicken. 
  5. Baste the chicken with some white sauce, then place the chicken skin-side down on the barbecue to cook for 50 minutes. Baste the underside of the chicken then flip over and baste again. Repeat this a few times. 
  6. Once the chicken is done, take it off the heat and let it rest for 20 minutes. When you’re ready to serve the chicken, take the reserved sauce and drizzle it over the chicken. Any leftover sauce can be used for dipping.
